Recipes for Cookies

Gluten Free Chocolate Chip Cookies

Ingredients:
- ½ cup unsalted butter softened (this will be 1 stick at room temp) - 1 tablespoon milk of your choice -¾ cup light brown sugar
-¼ cup granulated white sugar
- 1 large egg (at room temp)
- 2 teaspoons vanilla extract
- 1 ⅓ cup gluten free 1:1 baking flour such as Bob's Red Mill
-¼ cup almond flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup of chocolate chips or whatever mix-in you prefer

Directions:
1. In a medium bowl, whisk together gluten-free flour, almond flour, baking soda, and salt
2. In a larger bowl, cream together butter and both sugars. Mix will be light and fluffy. Then, add in your egg, vanilla, and milk
3. Add your dry mixture to your wet mixture and combine
4. Fold in your toppings
5. Set your dough in the fridge for at least 30 minutes
6. Place balls of cookie dough on a baking sheet with parchment paper (roughly 2 tablespoons each)
7. Baking for 11-13 minutes
8. Let the cookies cool on the sheet for 5 minutes.
9. Enjoy!

Traditional Mexican Wedding Cookies

Ingredients:
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1 tsp. vanilla
- 2 and 1/4 cup sifted flour
- 1/4 tsp. salt
- 3/4 cup chopped walnuts or pecans
- Powdered sugar

Directions:
1. Cream together butter and powdered sugar until light and fluffy and stir in vanilla.
2. Whisk together flour and salt and gradually add to butter mixture. Stir in chopped nuts.
3. Chill dough if it seems to soft.
4. Form dough in 1 and 1/4" balls and place onto parchment-lined or ungreased baking sheet.
5. Bake at 400 degrees for 10-12 minutes or just until the cookies start to turn light golden-brown. Remove from over and allow to cool slightly. While cookies are still warm (but NOT hot) remove them from baking sheets and roll, a few at a time, in powdered sugar. Allow cookies to completely cool on wire racks.
6. Cookies may (optionally) be rolled in powdered sugar a second time once cooled to room temperature.
7. NOTE: Forming dough into 1" balls will increase yield to 48 cookies.

Chocolate-Caramel Layer Squares

Ingredients:
- 1 (14 oz.) bag caramels
- 2/3 cup evaporated milk (divided)
- 1 (18.5 oz.) package of German chocolate cake mix
- 3/4 cup of butter, softened
- 1 cup chopped nuts
- 1 (6 oz.) semi-sweet chocolate morsels

Directions:
1. Combine caramels an 1/3 cup milk in top of double boiler. Cook, stirring constantly, until completely melted. Remove from heat.
2. Combine cake mix and remaining 1/3 cup milk and butter. Mix with electric mixer until dough holds together and add in the nuts.
3. Press half the cake mixture in greased 13x9x2 inch pan and bake at 350 degrees for 6 minutes.
4. Sprinkle morsels over crust. Pour caramel mixture over morsels, spreading evenly.
5. Crumble remaining cake mixture over caramel mixture. Return pan to over and bake for 18 minutes and then let cool.
6. Chill for 30 minutes.
7. Cut unto bars which will be soft and chewy inside.

Yields about 5 dozen.

Snickerdoodles

Ingredients:
- 1 cup soft shortening
- 1 and 1/2 cup of sugar
- 2 eggs
- 2 and 3/4 cup of flour
- 2 tsp. cream of tartar
- 2 tsp. soda
- 1/2 tsp. salt

Directions:
1. Mix first 3 ingredients thoroughly.
2. Sift together over the remaining 4 ingredients and stir into cream mixture.
3. Chill the dough.
4. Roll in balls the size of small walnuts.
5. Roll balls in mixture of: 2 tbsp. sugar and 2 tsp. cinnamon
6. Place, 2-inches apart, on ungreased baking sheet. Bake until lightly browned, but still soft. (Bake at 400 degrees for 8-10 minutes.) Cookies puff up at first; then, flatten out with crinkle tops.

Sugar Cookies

Ingredients:
- 4 and 1/2 cups all-purpose flour, sifted
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 cup shortening
- 2 cups sugar
- 4 eggs, beaten
- 1 tsp. vanilla
- 2 tbsp. milk

Directions:

1. Sift dry ingredients.
2. Cream shortening and sugar together. Add eggs and vanilla. Add sifted ingredients and milk.
3. Chill slightly or overnight. Roll on lightly floured table and cut. Roll 1/4 to 1/2 inch thick.
4. Bake on greased baking sheet at 375 degrees for 10-12 minutes.

Butter Pecan Cookies

Ingredients:
- 1 cup margarine
- 3/4 cup brown sugar (packed)
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 2 and 1/4 cup sifted flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1 cup chopped pecans

Directions:
1. Cream butter and sugars until light and fluffy. Beat in eggs and vanilla.
2. Combine dry ingredients and add to creamed mixture and mix well.
3. Stir in pecans.
4. Drop from teaspoon onto ungreased cookie sheets.
5. Bake at 350 degrees for about 10 minutes or until lightly browned.

Yields about 48.
